Penny’s delicious coffee ice cream

Our admin goddess, Penny Hickinbotham, is a lady of many talents, including whipping up a number of amazing recipes. Here’s her recipe for the a refreshing and yummy coffee ice cream, which she says is delicious in any weather:

  • 500 ml cream
  • 4 eggs
  • 1 large peanut brittle
  • 1 can condensed milk
  • 1 Tbs coffee essence (or 1 large tsp Nescafe dissolved in a little boiling water)

Directions

  1. Mix coffee with egg yolks and condensed milk
  2. Fold in slightly whipped cream and stiff egg whites
  3. Crush peanut brittle and place half of this at the bottom of mould
  4. Pour half the ice cream mixture into a long bread tin, then add the other half of the peanut brittle, and then the rest of the ice cream mixture
  5. Cover in Glad Wrap and freeze
  6. Turn out and slice to serve
