784 is the Absolu number of perfection
Colmant Cap Classique officially released its third vintage of the highly anticipated Absolu zero dosage this week. A mere 784 bottles were produced. Here’s how to get yours.

Having never tasted the Absolu, we were delighted when Colmant foudner Jean-Philippe Colmant and winemaker (and our legendary mate, ex maths teacher, soon to be PhD in bubbles) Paul Gerber joined another CN&CO favourite, Derek Kilpin from Great Domaines, to arrange a tasting. It was magical.
The Colmant winery was established in 2005 in Franschhoek and was the very first in South Africa exclusively dedicated to the production of Cap Classique. Their current production amounts to around 60,000 bottles a year across a range of six different cuvées.
The pinnacle of the Colmant range is the Cap Classique Absolu zero dosage NV. It is a blend of their very best Chardonnay base wines from Franschhoek, Elgin and Robertson that has spent seven years on the lees and almost one year of extra maturation on the cork. The time spent on the lees and the balance of the wine itself allows for no dosage. A mere 784 bottles were produced.
Bottled in June 2013, this is only the third release of Absolu.
